Analisis Pengendalian Mutu Produk Roti pada Nusa Indah Bakery Kabupaten Aceh Besar

Tujuan penelitian ini adalah untuk mengetahui pengendalian mutu produk roti pada Nusa IndahBakery mulai dari penerimaan bahan baku, proses produksi sampai dengan produk akhir sehingga
menghasilkan produk yang berkualitas. Penelitian ini dilakukan di Produksi Roti Nusa Indah Bakery di Lhok Nga
Aceh Besar. Pada penelitian ini digunakan metode penelitian deskriptif kuantitatif dan deskriptif kualitatif. Hasil
dari penelitian ini adalah urutan proses (tahap-tahap) pembuatan roti sampai dengan pengedalian mutu yaitu:
Tahapan proses produksi roti Nusa Indah Bakery; Cara pengendalian mutu bahan baku; Cara pengendalian
mutu bahan pembantu; Dari semua proses yang dilakukan dalam pembuatan roti yang perlu diperhatikan
kaitannya dengan pengendalian mutu; Kualitas roti yang baik di perusahaan Roti Nusa Indah Bakery;
Penanganan alat di pabrik ini masih kurang baik
